In Kirinyaga County, along the southern slopes of Mt. Kenya, the Nyanja Factory is situated, near the town of Kianaga.

Wet mills in Kenya are called factories. The Nyanja Factory is one of 12 that process cherries belonging to the members of the Baragwi Farmers Cooperative Society (FCS). The FCS was established in 1953 and now have 11,791 members, each managing their own small coffee farm. The FCS supports these farmers with processing at the Factories in addition to other supportive measures such as agricultural trainings.

Once the cherries are delivered to the Factory, they are sorted to remove any that are over or underripe. Next, the cherries are de-pulped to remove the external fruit. Fermentation follows, whereby the coffee beans are placed in tanks to ferment overnight, breaking down the sugars in the sticky mucilage. The following day, the coffee is rushed through channels of water to clean and remove any remaining mucilage or debris. Once cleaned, the coffee is then spread evenly on raised beds to dry in the open sun for 7 – 15 days, or until the ideal moisture content is reached.

Despite the late start, today, it is a country renowned for having some of the best coffees in the world. Nonetheless, Kenya’s coffee sector faces challenges for the future, and low global prices combined with climate change and population growth have diminished the country’s output over the last decade.
